I just threw this all together and played around with the amounts of "stuff" until it tasted good, so this is an estimate of what came out when it was all said and done. Tasty! Ingredients

    6 Hard Boiled Eggs
    2 tbsp Light or Fat Free Mayo
    2 tbsp Dill Relish
    Basil & paprika to taste

    (Bread not included in recipe calculations; I used 100% Whole Wheat from Sara Lee.)

Directions

It's simple: just peel the hard boiled eggs, chop 'em up and throw it all in a bowl. Add in mayo, relish, and spices, stirring or mashing with a fork, until you reach your desired taste. (You can also add mustard; I didn't because I'm allergic.)

This can be eaten as a side dish or spread on bread for a refreshing summer sandwich. I'm taking mine to the park for a picnic tomorrow!
