Ingredients

    1/4 cup sun-dried tomatoes packed in oil (8 tomatoes)
    1 (8 ounce) cream cheese
    1/2 cup sour cream
    1/4 cup good mayonnaise
    10 dashes hot red pepper sauce
    1/2 teaspoon kosher salt
    3/4 teaspoon fresh ground black pepper
    2 scallions (or green onions) (white and green parts - chopped)


Directions

Makes 20 oz of dip. I ate a roasted eggplant wrap and used 2T (1 oz) of the dip for the wrap.
Directions
1. Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade.
2. Add the scallions and pulse twice.
3. Serve at room temperature.
4. If making in advance, store in the refrigerator and take out the morning of to let the cream cheese soften.

Note - don't puree the tomatoes too much or leave a few aside and pulse in a processor a few time for color and chunkiness.

    Thanks for putting this recipe in Spark and for using low fat ingredients in nutritional information! Got the cookbook for Christmas and made this dip for two parties so far. Everyone loves it! It's definately a keeper and one to share! - 2/2/12
