Ingredients

    5 oz bonelsess, skinless chicken breast, cut into 1-inch slice
    1tsp olive oil
    2tbsp lemon juice
    1/4 c onions, thinly sliced
    1tsp paprika
    1tsp mrs dash
    1 cup of bell peppers (red, yellow, and green) cut into 1-in cubes
    1 cup green zucchini, cut into 1-1/2 in rounds
    sea salt to taste
    3 wooden or metal kabob sticks
    nonstick cooking spray

Directions

marinate the chicken in the olive oil, lemon juice, onions, and paprika for 30 minutes. then season the chicken w/ mrs dash; skewer chicken cubes w the bell peppers onto the kabob sticks. grill or broil until cooked through, about 8 minutes. meannwhile, arrange the zucchini slices onto a baking sheet, season with sea salt, and spray w nonstick cooking spray. bake @375 degrees for 12-15 minutes, or until soft
