Introduction
A simple recipe from Canadian Living A simple recipe from Canadian LivingNumber of Servings: 10
Ingredients
-
Beans, black, 3.5 cup (remove)
Carrots, raw, 1.5 cup, chopped (remove)
Celery, raw, 1 cup, diced (remove)
Onions, raw, .5 cup, chopped (remove)
*Campbell's low sodium chicken broth, 3 cup (remove)
Water, tap, 1 cup (8 fl oz) (remove)
Salsa, .5 cup (remove)
Spices to taste: cumin, smokey paprika, granulated garlic, salt, black pepper
Directions
chop up all your ingredients
saute onions for 3-5 minutes. Season onions with cumin, paprika, & garlic.
Add carrots, celery, and stock. Let it come to a boil
Add beans and water (if neccesary)
season with salt and pepper
Let cook 15 minutes, or until celery and carrot soften
Using an immersion blender, randomly "rough puree" the soup (i.e. You don't want it to be smooth... you sould still be able to see the carrot/celery/bean pieces)
Serving size: depends how big your appetite is and if you're eating anything else with it.
If it's for lunch, I eat about 1.5-2 cups
If it's before a meal, just 1 cup
