Ingredients

    4 chicken breasts, cut into pieces
    1 (28 ounce) can diced tomatoes with juice (low sodium)
    1 cup chicken stock
    3/4 cup peanut butter
    1 diced onion
    8 garlic clove (minced)
    1 teaspoon cumin
    1/4 teaspoon cinnamon
    1 1/2 teaspoon crushed red pepper flakes
    1 teaspoon pepper
    2 teaspoons white sugar
    1 cup salsa
    2 tbsp lime juice
    2 tsp grated fresh ginger
    1/3 cup chopped roasted peanuts– for garnish
    1 green pepper cut in strips
    1 head of broccoli, chopped
    1 medium potatoes, diced
    1 red chilli pepper, chopped
    1 cup frozen peas
    2 tbsp soy sauce
    9 cups bean sprouts


Directions

1. Brown Chicken in frying pan
2. Put all ingredients into Crockpot except and chopped peanuts.
3. cook on low for 5-6 hours.

Serve on plate or bowl, and top with a 1/2 cup of fresh bean sprouts and sprinkle with chopped peaunts.

Don’t lift the lid!! Every time you do, it adds 15 mins of cooking time!

I'm not sure exactly how much it makes... but I would say around 15-20 1-cup servings.

Calories are for 18 cups.

Serve over rice :)
