Number of Servings: 3

Ingredients

    1 cup of yellow lentils (Dal)
    1 cup of chopped baby carrots
    1 cup of chopped vidalia onions
    2 cloves of garlic, (pressed)
    1 14-oz can of chopped tomatoes
    1 teaspoon salt
    1/4 teaspoon of pepper
    1 tablespoon of olive oil
    1 tablespoon of butter
    2 tablespoons of curry powder

Directions

Makes 3 2-cup servings.

Mix all ingredients except for tomatoes, butter, oil and salt in a 4-quart crockpot.

Cover and cook on low heat for 6 hours or until Dal is tender.

Stir in tomatoes, oil, butter and salt.

Let butter melt and serve.
