Introduction

Grilled chicken with jerk seasoning and pineapple cabbage slaw with a light dressing. Grilled chicken with jerk seasoning and pineapple cabbage slaw with a light dressing.

Ingredients

    Chicken Breasts, pineapple, bok choy, red cabbage, cider vinegar, brown sugar and jerk seasoning.

Directions

Shred cabbage and bok choy and add chopped pineapple. Mix together brown sugar and cider vinegar and toss in slaw mixture. Spray each chicken breast with Olive Oil cooking spray and coat with jerk seasoning. Grill until juice runs clear (170F). Serve over pineapple slaw.

    I love this easy recipe for any day of the week. So many fresh ingredients. Not sure if it is really jerk chicken. My family thinks it is delicious. - 5/4/11

    This is NOT jerk. Jerking meat was a preservation method used by the Maroons many years ago. Cooked over wood, particularly pimento, it gives the meat a special flavour. Meat is highly seasoned with lots of pepper. What was dscribed above is grilled chicken with Jerk flavoured seasonin - 7/24/10
