Introduction

Chicken Casserole with corn tortillas, cheese, Rotel, onion, and green pepper Chicken Casserole with corn tortillas, cheese, Rotel, onion, and green pepper
Number of Servings: 12

Ingredients

    1 can Cream of Mushroom Soup
    1 can Cream of Chicken Soup
    2 cans Rotel tomatoes and green chilis
    1 Medium sweet onion
    1 large green pepper
    1/4 stick salted butter
    2 cups Monterrey Jack and Colby shredded cheese
    24 corn tortillas
    3 chicken breasts

Directions

Cook chicken in a skillet and cut into cubes.
Dice green pepper and onion and cook in skillet with butter.
In a large bowl, mix soups, Rotel, cooked green pepper and onion.
In a 9X13 casserole dish spread a small amount of soup mixture in bottom.
Layer corn tortillas, soup mixture, chicken and cheese.
Cook in oven at 325 degrees for 40 minutes.
