Introduction

As a kid, my favorite flavor of instant oatmeal was Quaker Peaches and Cream. Here, it's similar but a bit more grown-up, with fresh pieces instead of dehydrated. Makes two low-calorie servings or one reasonable-calorie (and filling) breakfast. It could even be a dessert! As a kid, my favorite flavor of instant oatmeal was Quaker Peaches and Cream. Ingredients

    1 medium peach
    1 cup water
1/2 cup old-fashioned oats (not instant)
1 tsp Splenda brown sugar blend
    Cinnamon
    2 tbsp half-and-half
1/2 tsp vanilla or almond extract (optional)

Directions

Bring water to a boil. When boiling, add oats and 1/2 of the peach, chopped. Cook for 2-3 minutes, making sure it doesn't boil over. Stir in a dash of cinnamon, brown sugar, and extract, if using. Cook until oats are tender and most of the water has cooked off. Transfer to bowl, top with peach slices, 1 tbsp half-and-half (or 2 if making this recipe a single serving), and a dash of cinnamon if desired.
