Directions
Cream together butter, oil, and Splenda. Add egg whites and vanilla, then sour milk. (to make sour mik, add 1/2 tbsp to milk and let sit for 15 minutes). Beat well with mixer, then add with dry ingredients, beat well and then stir in zucchini. Bake in a 325 degree oven for 20 minutes.
Makes 24 cupcakes.
Next time I will use applesauce in place of part of the oil, but when I made these last night I didn't have any applesauce at home.
