Ingredients

This recipe is for two servings - 3 skewers each if used as a main course - it can easily be used as a side dish serving 3-6 people.
6 bbq skewers - metal (preferred) or bamboo
1 lb uncooked tail on large devained shrimp (approx 36)
Marinade:
5 fresh basil leaves chopped extra fine (option: lemon basil)
1 stalk fresh rosemary leaves, chopped extra fine
1 clove garlic, grated extra fine
1 tbs finely chopped fresh chives
2 tbs extra virgin olive oil
1 tbs white distilled vinegar
1 tbs water
dash salt (to taste)
dash pepper (to taste)
Directions
place fresh or thawed uncooked tail on shrimp on skewers, piercings twice for a secure hold - approx 6 shrimp per skewer, place on dish and set aside
Marinade:
In small bowl combine olive oil, vinegar, water, herbs, garlic, salt & pepper, mix well
Tip: kitchen scissors work great for cutting herbs.
Brush marinade over shrimp, flipping and brushing each side.
Cooking:
grill over medium heat approx. 2 min each side - do not over cook, shrimp will be done when they appear pink and opaque.
Tip: metal skewers w/ a skewer rack is preferred for even cooking.
