Ingredients

    Red Ripe Tomatoes, 16 cup, chopped or sliced (one gallon ice cream bucket full)
    Jalapeno Peppers, 13 peppers chopped
    Onions, raw, 4 cup, chopped
    Bell Pepper, Green - 5 cups chopped
    Distilled White Vinegar, 2.5 cups
    Granulated Sugar, .75 cup
    Salt, .25 cup
    Garlic Minced, 1 tbsp
    Pepper, black, 1 tbsp
    Cumin - Ground, 2 tbsp
    Chili powder, 2 tbsp
    Alum, 1 tsp
    Tomato Paste, 3 can (6 oz)

Directions

Combine everything but tomato paste, cook uncovered for 2 hours on med/high, skim off top, add tomato paste & cook 15 more minutes. Process/can using your own method.

    This is the recipe I have used for years but I make about double this amount. I am interested in the serving size for the nutritional value. What would each serving size be. I would probably guess 1/4 cup. This is very yummy but am going to cut sugar and salt nex time I make it. - 8/22/10
