Introduction

A great way to add some greens to your diet. A great way to add some greens to your diet.
Number of Servings: 3

Ingredients

    2 zucchinis sliced or chopped [about 2 cups]
    1 whole egg
    1 dash salt
    1 dash ground black pepper
    1 tsp olive oil

Directions

1. Slice or chop zucchini [you can use a food processor] to desired consistency. Big chinks it you like latkes that way or pureed if you're trying to hide the veggiesfrom someone or prefer a pancakelike consistency.
2. Let the zucchini sit for 5 minutes and squeeze out any excess moisture.
3. Add salt and pepper to taste. Mix.
4. Add the egg and beat until uniformly mixed.
5. Heat oil over medium in a nonstick skillet.
6. Form the zucchini and egg mixture into patties and fry in the oil until golden brown on each side.
7. repeat with remaining mixture and serve warm.
