Introduction

Number of Servings: 12

Ingredients

    2 cups whole wheat flour
    1 cup 1% milk
    1 egg
    1 tsp cinnamon
    1 tsp baking soda
    2 tsp baking powder
    1/2 tsp salt
    1/4 cup sugar
    1/4 cup + 1 tbsp brown sugar
    6 oz greek yogurt
    1 tsp vanilla
    1 1/3 cup fresh blackberries (or other berry of your choice)

Directions

Preheat oven to 400 degrees and oil muffin tin (or use paper muffin cups)
Mix dry ingredients in large bowl.
Mix wet ingredients in medium bowl.
Make well in dry ingredients and add wet ingredients. Fold to incorporate to point there are no lumps left.
Add blackberries and fold in to batter gently.
Fill muffin tins 2/3rds full with batter.
Bake 15-20 minutes or until golden brown and set through.
Cool on wire rack and enjoy!

Makes 12 muffins.
