Ingredients

--1 1/2 stick of butter (12 T)
--6 T flour
--3 1/2 cups heavy cream
--2 t dried thyme
--2 t kosher salt
--4 t dried mustard
--1 t black pepper
--3 brown potatoes
--3 sweet potatoes
--2 parsnips
--1 white onion, chopped
--2 cups shredded cheddar cheese or pecorino romano
--green onion for garnish (totally optional)
Directions
--wash and peel your potatoes and parsnips. I chose to leave a bit of potato skin on for color and texture; your choice.
--slice them longways, then slice in 1/4 inch slices
--chop up white onion. Or maybe dice it? Make little tiny pieces.
--plop veggies into stoneware
Combine your spices in small bowl.
Melt butter in a medium saucepan over medium heat. Slowly add your flour, stirring constantly for 3-5 minutes. Then slowly add your milk/cream, and spices, stirring continuously to blend.
Pour mixture over potatoes and parsnips, and close the crock lid.
Cook on Low for 8-9 hours or high for 4-5.
Before serving, stir in the shredded cheese until it disappears.
Garnish with green onion if you are feeling fancy.
