Introduction
This is a spicy green burrito that I threw together from leftovers. They are juicy so after the burrito is cooked the bottom will be soft and the top will be crunchy. One burrito is way too big for me and I love large portions. This is a spicy green burrito that I threw together from leftovers. Ingredients
-
3 chicken breasts
1 avocado
1 Roma tomato
1 lime (for juice, not pulp)
1 can Cream of chicken soup (Campbells 98% fat free)
.5 cup of shredded cheese (Kraft low fat)
1 can green chilies diced
1 tbsp Kosher salt
1 tbsp ground pepper
1 tsp steak seasoning
8 whole wheat burrito sized tortillas
Directions
Preheat oven to 350 degrees
Boil chicken in water. The longer you boil the easier it is to shred.
Shred chicken breast, dice tomato, and mash avocado.
Mix together chicken, tomato, avocado, cheese, cream of chicken, cheese, chilies, salt, pepper, steak seasoning, and lime juice. (I like to squeeze everything I can out of the lime for tangy flavor.)
Spread mixture over each tortilla and wrap like a burrito.
Put burritos into oven for 10-15 minutes.
These burritos do not have to be cooked at all but I like the crunch it adds to the tortilla.
