Such an easy and delicious way to cook chicken. Fresh lemon is key to this dish. Serve with roasted potatoes and asparagus. End the meal with cheesecake pudding topped with fresh blueberries. Ingredients

    16 oz chicken breast halves, (4)
    1/3 cup of lemon juice
    Salt & Pepper (liberal amounts of both)
    1 teaspoon dried rosemary, basil. or sage (optional)

Directions

Arrange the chicken in a shallow greased baking dish. Sprinkle each piece liberally with rosemary, salt and pepper. Dribble on the lemon juice. Cover and bake the chicken at 375 for about 25 minutes, or until the chicken juices run clear when you poke the biggest piece with a fork. *For extra flavor you can baste the chicken with the lemon flavored pan juices every 15 minutes or so.
