Introduction

Ingredients

1 cup steel cut oats
2 1/3 cup of Silk vanilla soy milk
2 large fresh peaches, diced (frozen will work too)
3 tsp cinnamon
4 pkts of Splenda
1/2 cup egg substitute
pinch of salt (optional)
Directions
Heat oven to 375 F.
Place milk and oats in over medium heat and bring to a boil. add other ingredients except egg substitute, bring back to a boil. Just before putting in oven, add egg substitute.
I use my dutch oven so I just place the lid on and put that right in the oven. Otherwise use a glass 8x8 baking dish with a lid, spray the pan liberally with oil.
Bake covered for 35 minutes or until liquid is absorbed. Turn off oven, take lid off and allow the top to darken a little in the residual heat (5-10 minutes).
You can add extra sweetener or milk if you think it needs it. I also change up the fruit and add nuts from time to time.
Makes six 3/4-1 cup servings.

Cooking oats first to get them going & putting in the oven all in one dish, great idea.Taste was great & it was a creamy baked oatmeal, not a firm one. (smaller) dutch oven-may be reason there? Will add spices with the oats next time, as cinnamon clumped in hot oatmeal, Tempered egg first, Great - 7/10/17
