Introduction

A hearty Tex-Mex chili without beans, developed because my son has a legume allergy. A hearty Tex-Mex chili without beans, developed because my son has a legume allergy.
Number of Servings: 10

Ingredients

    1 lb. ground bison (buffalo)
    1 cup chopped onion
    2 garlic cloves, minced
    1/2 cup diced celery
    1 cup diced carrot
    2 - 12-oz cans diced tomatoes, no salt added
    3/4 cup canned hominy (posole), rinsed
    3 Tbsp chili powder
    2 tsp ground cumin
    1 tsp dried oregano
    1/2 cup fresh-cut refrigerated salsa

Directions

Brown ground bison, drain. Add chopped vegetables and simmer for 5 minutes. Add tomatoes, hominy, and spices, stir and simmer for 30 more minutes. Add fresh salsa near end of cooking. Serve with shredded cheese on top if desired. Makes approximately 10 1-cup servings.
