Ingredients

    1 pound extra firm tofu
    1 handful fresh basil leaves
    2 tablespoons tahini
    2 tablespoons Extra Virgin Olive Oil
    1.5 tablespoons souy sauce or Bragg's liquid aminos
    1.5 tablespoons red wine vinegar

Directions

crumble tofu and mix all ingredients in a bowl with a fork or your hands

transfer to a blender and add just enough water to get it to blend smooth

add as you would ricotta to lasagne or manicotti

try not to eat it all up before the meal!
