Ingredients

    2 3/4 cup white flour
    2 cups splenda (can use reg sugar but going to significantly increase calorie count)
    1/4 tsp salt
    1 tsp baking soda
    2 tsp cream of tartar
    2 cup canned pumpkin pie mix (or reg canned pumpkin but then add pumpkin pie spice and cinnamon to mix)

    cinnamon and splenda for dusting

Directions

mix dry ingredients (except cinnamon and splenda for dusting)

add pumpkin a little at a time and stir to blend well (but not liquify)

spray muffin pan or muffin top can with baking spray

spoon into pan and sprinkle cinnamon and splenda on top

bake at 350 for about 20-25min till tops are browned and muffins are baked through
