Introduction

This stew is so easy and can be served alone or over rice. Garnish with chopped cilantro and diced tomato for an added zip! Veggies can be sauteed in a bit of oil for added flavor! Ingredients

    20 oz bag of dry 16 bean soup mix , soaked overnight, rinsed and drained
    6 cups of hot water
    3 large Knorr bouillon cubes
    1/2 green pepper, chopped
    1 medium onion, chopped
    1/2 tsp granulated garlic
    2 stalks of celery, chopped
    2 Tbsp of Sofrito


Directions

Combine all ingredients in large pot.
Bring to a boil.
Simmer gently with lid slightly askew to allow steam out a bit.
Cook, stirring occasionally until desired tenerness is achieved. Test several beans as some may get tender before others.
Makes 10 1-cup servings.
