Makes 5 large crab cakes.
one per person for appetizer, two as a main entree

Ingredients

    Crab, Philip's Blue Lump 16oz Container
    Hellman's Real Mayonnaise, 3 tbsp
    8 premium saltines
    Dry Mustard, 1 tbsp
    Cayenne Pepper (Ground), 0.25 tsp
    Egg, fresh, 1 jumbo
    Safflower Oil, oleic, 3 tbsp
    Chopped Parsley, 3 tbsp

Directions

combine wet ingredients. separately crush crackers and mix with dry ingredients. mix together with crab being careful to keep crab lumps. gently shape into patties.
fry in safflower or canola oil till brown on both sides.
