Introduction

Ingredients


    * *Turkey, Ground turkey, 93% lean, 19.3 oz
    * Bread crumbs, dry, grated, plain, .75 cup
    * Egg substitute, liquid (Egg Beaters), .25 cup
    * Peppers, sweet, red, raw, sliced, .5 cup
    * Onions, raw, .5 cup, chopped
    * *Kraft 2% Shredded Cheddar Cheese, .75 cup
    * Mushrooms, fresh, .5 cup, pieces or slices
    * Salsa, .25 cup
    * Sour Cream, reduced fat, .5 tbsp
    Basil, 2 tbsp
    Pepper, black, 1 tbsp

Directions

Mix ground turkey with egg substitute, basil, pepper and bread crumbs

Saute onions, green peppers, and mushrooms in a fry pan with the olive oil

Spread half of turkey mix on a oil sprayed pan

Sprinkle 1/2 the cheddar on the bottom half of meatloaf

Add the onion pepper and mushroom mixture

Pinch sides closed and form a nice meatloaf shape

Cook 375 in oven or grill for 45 mins

Put rest of shredded cheddar on top of meatloaf

Cook an additional 15 mins

Serve with salsa and sour cream on top

Top meatloaf with other half turkey mixture
