Introduction
Instead of a bunch of oil and sugar (or splenda) which is typical in this recipe, use unsweetened applesauce instead. It cuts the calories, and adds a little sweetness. The vinegar and ramen seasoning mask any fruity or "apple" flavor. Also, at my grocery store, I can get a 50 oz. jar of applesauce for less than $1.50, so it is a money saving tip as well! Enjoy! Ingredients

1 1-lb bag of shredded cabbage
1 small carrot grated
4 scallions, chopped
1/2 cup applesauce, unsweetened
2 tbsp olive oil
2 tbsp Rice Wine Vinegar
1/2 block of Ramen Noodles crushed
1 packet Ramen Noodle Seasoning
1/2 tsp black pepper
Directions
Toss grated carrots, scallions, crushed noodles and cabbage together.
in a separate bowl, wisk together remaining ingredients.
Comine dressing and cabbage mixture. Serve immediately.
NOTE: if you anticipate having leftovers, do not add the Ramen Noodles, but serve them on the side as a "topping." this way, you can store the remaining slaw in the refrigerator and just add the noodles as you go. This ensures the noodles stay crunchy.
Makes 10 1/2 cup servings
