Number of Servings: 2

Ingredients

    * 2 chicken breasts
    * 5 scallions
    * 1/2 cup green pepper
    * 4 tablespoons red wine vinegar
    * 2 tablespoons cornstarch
    * 1 cup canned pineapple
    * 1 tablespoon Splenda brown sugar
    * 4 tablespoons ketchup
    * 1 cup low sodium chicken broth
    * 1 cup brown rice (cooked)

Directions

* Cut chicken into chunks and cook in pan with cooking spray until no longer pink
* Cook scallions and green pepper in pan with cooking spray until crisp tender
* Mix vinegar, cornstarch, chicken broth, brown sugar, and ketchup together. Add to chicken and stir constantly until sauce thickens
* Add cooked scallions and green pepper, stir in pineapple, cover and cook for 2 minutes or until heated through
* Serve over brown rice
