Ingredients

    2 C fresh (or frozen) blueberries
    3/4 C Brown Rice Flour
    1/2 C Oat bran, divided in half
    1/2 C Egg substitute
    1/2 C Turbinado or granulated sugar
    1/2 C salted butter, melted

Directions

Spray 8x8 pan with non-stick spray. Wash blueberries and shake off excess water. Spread evenly into the bottom of the pan.

Mix brown rice flour, 1/4 C oat bran, sugar, and egg substitute together. Spread evenly on top of the blueberries. drizzle butter on top of the batter.

Bake in 375 degree oven for 20 mins or until golden brown. Cut into 9 pieces and serve.
