Introduction

This could be considered vegan, except that the almond cheese has some casein added. Otherwise a tasty vegetarian casserole. You can adjust for the level of spiciness you prefer.

I don't used canned beans, so that helps cut down a bit on the sodium. I call it 'lowsat' because of the minimal amount of saturated fat.

Ingredients

    Tostada, GUERRERO Toasted Corn, 2 serving (remove)
    La Victoria Enchilada Sauce, 0.5 cup (remove)
    Almond Cheese, Cheddar Style, 7 oz (remove)
    *Olives, sliced, Black Pearls - Musco Family Olive Co., 50 gram(s) (remove)
    Spinach, fresh, 4 cup (remove)
    *Brown Rice, long grain, .7 cup (remove)
    Beans, black, 0.5 cup (remove)
    Beans, red kidney, 0.6 cup (remove)
    La Victoria Diced Green Chiles, .5 cup (remove)
    Onions, raw, .7 cup, chopped (remove)
    Jalapeno Peppers, 1 pepper (remove)

Directions

Precook, drain and cool vegetables.
Layer ingredients in a 9X9 baking dish, beginning with the beans, rice, then veggies. Otherwise the bottom will be soggy.
I divide cheese into two equal amounts, adding one layer in between the vegetables and cheese. Then the tortillas, a few more beans and top with cheese and olives.

Bake at 375, about 40 minutes.
Makes 6, approximately 1.5 cup servings.
