Ingredients

    4 egg whites
    2 TBSP olive oil
    1 medium red bell pepper, seeded and sliced
    .75 cup spring onion
    1 cup frozen peas
    1 cup snow peas
    4 cups cooked brown rice, chilled
    4 TBSP fresh cilantro, chopped
    1 can pineapple chuncks or tidbits in juice, drained
    .25 cups reduced sodium soy sauce

Directions

In a wok, cook scramble egg whites and set aside.

Add oil to wok and cook onions and bell pepper and saute, add snow peas, and peas.

Add rice and cook 2 minutes.

Add 2 TBSP of cilantro and pineapple and cook 1 minute, stirring gently.

Add soy sauce.

Sprinkle with remaining 2 TBSP cilantro and serve.
