Green Peppers 1 large chopped in chunks
Peppers, sweet, red, fresh 1 large chopped in chunks
Red Ripe Tomatoes, 4 cup, chopped or sliced
Chick Peas, 3 cup (or 1 can)

Lentils, 3 cup (or 1 can)
McCormick ground cumin, 2 tbsp (remove)
    Chopped Garlic, 4 tsp (remove)
Pepper, red or cayenne, 1 tbsp (remove)
1 or 2 tsp lime juice (rose's - but, you can use fresh squeezed limes and adjust)

Directions

Makes about 12 1.5 cup servings. Add a little cheddar cheese and it's extra good.

Brown the ground turkey in large, deep pan
While browning, cut up the veggies and get beans open
When turkey is done, add lime juice, mix and set aside in separate bowl
Put veggies (all EXCEPT TOMATOES) in pan used for turkey and stir. Cook for about 5-10 minutes until softened
Add Beans and stir. Continue to cook.
Add all spices and mix thoroughly
Add cut tomatoes and mix again.
Cover and simmer for about 30 minutes (or as long as you'd like. it can also be cooked in a crock pot and simmered for hours.)

can adjust turkey/beans for calorie intake. personally, i think the lentils aren't that great - but my husband loves them. leaving them out saves a lot of calories.
