Ingredients

    1-1/2 yellow or orange tomato (medium size)
    1/8 medium red onion
    3/4 yellow bell pepper
    1 tbsp virgin olive oil
    1 tbsp red wine vinegar
    salt & pepper to taste

Directions

Slice all ingredients and combine in bowl with oil and vinegar.
Chill for at least an hour. Serve.

    yummy! I made this with garden tomatoes, and garden basil instead of the peppers, and used organic unpasteurized cider vinegar, also a few drops of liquid stevia - very very delicious - 8/23/10

    In season, mid to late summer, this will be a great choice. But now the tomatoes are blah, peppers also. Show us this again in summer. I am in Calif. - 4/20/09
