Introduction

Borrowed the Sparkrecipe from ALAGUE and substituted brown sugar for white, used egg whites and applesauce instead of oil. Ingredients

    Flour, white, 1 cup
    *Whole Wheat Flour, 1 cup
    Baking Soda, 1 tsp
    *Dixie Crystals Light Brown sugar, 1 cup
    Kiwi Fruit, 3 peeled and finely chopped
    egg white, fresh, 4 large
    Applesauce, unsweetened, 3/4 cup
    milk 2% great value, 1/2 cup
    Water, tap, 1/4 cup

Directions

sift flours, baking soda into a bowl
add sugar and mix;; stir in kiwi.
combine eggs , applesauce milk and water; gently stir into dry ingredients until just moistened, do not overmix. spoon into lighlty greased or lined mini muffin pans until mostly full for 48 muffins. if you want 72 muffins you can fill 2/3. bake at 350 for 10 mins or until golden brown. let cool
makes 48 mini muffins even the kids will love these virtually fat free muffins!
