Introduction

Ingredients

    Chicken breast boneless skinless 16 oz in bite size pieces
    Onions, raw, 1 small
    garlic minced, 3 cloves
    green chilies diced - la preferida, 4 oz
    Green Peppers, 1 cup, chopped
    Spinach, fresh, 4 cup
    ground Cumin, 2 tbsp
    Extra Virgin Olive Oil, 1 tbsp
    14.5 oz can tomatoes diced low sodium great value
    Lime Juice from 2 lime
    Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 4 cups
    Beans, black, 1 3/4 cup
    Brown Rice 2 cup

Directions

makes 8 1 cup servings

heat oil in large soup pot over med-hi heat and add garlic, onion and peppers. cook until soft and starting to get some color about 5 mins. Lower heat to med add chicken and cumin and cook another 5 minutes. Add broth, beans, tomatoes, and spinach. raise heat to med - hi and simmer for 10 minutes. remove from heat and add lime juice stirring well. season with pepper to taste.

to serve place 1/2 cup cooked rice in bottom of bowl add 1 cup hearty soup. optional sprinkle avocado and cilantro (not included in ingredients) over top.
