Introduction

Recipe listed here previously with recalculated calorie counts and a few minor changes. I used 1 1/2 pounds chicken rather than 2 pounds; I used one can diced tomatoes rather than fresh; I reduced cayanne pepper to 1/2 tsp. and I omitted curry leaves which are not readily available in my area. Ingredients

    24 oz. diced boneless, skinless chicken breast
    1 T. olive oil
    1 large onion chopped (about 1 c.)
    1 can diced tomatoes (about 1 cup)
    1 T. cumin
    1 T. corriander
    1 tsp. turmeric
    2 tsp. ginger
    5 cloves garlic, minced
    2 tsp salt
    1 T. lemon juice
    1 T. black mustard seeds
    1/2 tsp cinnamon
    1/2 tsp cayenne pepper
    approx. 1/2 c. water or more to thin sauce a bit

Directions

Brown onions and garlic in oil, add spices and brown, add lemon juice, add tomatoes and chicken. Simmer until chicken is cooked. Add water if needed to thin sauce. Serve over Basmati rice (not included in calorie count).
