Ingredients

    Egg plant 2-3 medium size
    1 lb ground beef/turkey
    1 can crushed tomatoes
    2 cloves garlic
    1 medium onion
    1 green pepper
    Fresh cheese
    2 Tablespoons Olive oil
    Oregano
    Salt

Directions

Place egg plant in microwave oven medium 10-15 minutes. When cooked slice. In a skillet, place 2 tablespoons of olive oil and add chopped garlic, onion & peppers until sauted. Add ground beef, cook drain the fat and add crushed tomatoes. Add Oregano and salt. Simmer for 20 minutes.
In a 11x8.5 oven pan place one layer of sliced egg plant, one layer of beef sauce and a layer of fresh cheese. Repeat. The last layer must be cheese.
Place in preheated oven 350ºF for 20-25 minutes.
Simple, easy and delicious.
