Number of Servings: 10

Ingredients

    1 can sweet corn (15 oz)
    1 can chili beans (15 oz)
    1 can butter beans (15 oz)
    1 can chili beans - different variety (15 oz)
    1 can chopped tomatoes with green chilis (15 oz)
    1 cup brown rice
    2 cups water
    1 packet taco meat seasoning

Directions

Combine all ingredients in a crock pot, cook on low 5 hours or so, until rice are plump and tender.

Separate into 8 servings, approximately, 1 cup each.

Eat immediately, or separate into individual containers or zip-lock bags, and freeze until you would like to eat.

To thaw, microwave for 4-7 minutes, stirring occasionally.

    Very good! I made it the stove-top way, too. For me, though, I could have cut the recipe in half. It made a large amount for one person. Enchilada filling! YAY! - 1/8/08
