Introduction

A healthified version of an old family favorite! A healthified version of an old family favorite!
Number of Servings: 6

Ingredients

    1.5 lb Ground Turkey
    1 can (apx 14.5 oz) Ready to Serve Beef Broth
    1 can (15.5 oz) Italian style Diced Tomatoes
    2 cups farfelle (bowtie) pasta
    2 cups thinly sliced zucchini
    .75 cup Shredded Parmesan cheese

Directions

Brown Turkey over medium high heat until it is no longer pink (apx 6-8 minutes)

Add Broth, Tomatoes, & Pasta, pushing pasta into liquid. Bring to a boil, reduce heat to medium. Cook, uncovered, 15 minutes stirring frequently. Add zucchini, continue cooking 5 minutes or until pasta is tender.

Stir in .5 cup Parmesan and heat through. Sprinkle with remaining cheese.

Serves 4-6 (4 very generous portions - but I usually serve it with a side salad and it serves 6 easily!)
