Ingredients

    A- 1 cup dried white beans ( soaked overnight)

    B- 8 cups water
    2 cup lean cured ham, washed, and diced
    2 chorizos links (Spanish Sausage)
    1 medium onion, finely chopped

    C- 1 tablespoon salt
    1/4 teaspoon fresh ground pepper
    2 cups diced potatoes
    2 cups fresh spinach


Directions

1- Drain beans, wash under running water and drain again. Place in a large, 12-quart big sauce pan.

2- Add ingredients included in B, and bring to a brisk boil over high heat. Reduce heat to low, cover, and cook slowly for 2 hours.

3- Add ingredients included in C, and bring to a boil over high heat. Reduce to low, and cook, partially covered, for 1/2 hour.

4- Remove chorizos, diced and return to pot.

5- Cook over low heat, uncovered, for another 1/2 hour.
