Number of Servings: 6

Ingredients

    1 bag vegetable soup mix veggies
    3/4 cup Mirepoix (carrots, celery and onion) sauteed
    4 cups low sodium beef (or vegetable) stock
    2 small tomatoes chopped and seeded
    2 tsp instant beef bouillon (NO SALT)
    1 tsp minced garlic
    season with black pepper, salt and herbs

Directions

Saute Mirepoix, tomatoes and garlic until tender. Add vegetables, stock and bouillon. Season and simmer. Season with salt and herbs to taste!
