Introduction
I'm not a baker or any kind of cook. This is something I started making in the last month or so and am entering it so I can log my portions. I'm sorry if it doesn't meet anyone's standards.It's just basically Quaker muffin mix w/ equal parts bran, oat bran, ground flax seed and oats with whatever fruit is on hand. Cranberries and blueberries are really nice, but I've enjoyed dates too.
I'll have to amend this later - they didn't have nutritional info for the muffin mix and I don't have a package on hand to copy it from. The fibre should be higher. I had to guess with the mix that looked closest in calories. I also had to choose "crude bran" instead of wheat germ. I'll look for that info elsewhere and enter it.

Ingredients

1 cup Quaker low-fat oat or bran muffin mix
1 cup ground flax
1 cup oat bran
1 cup wheat germ
1 cup old-fashioned oats
1 cup frozen cranberries, blueberries, mashed bananas, dates or whatever you'd like
Water to consistency you want
Directions
Preheat oven to 400.
Mix together all ingredients, stirring in each addition and adding water last.
Spray 2 loaf pans with nonstick spray. Split the batter between them.
Bake for 40 minutes. Test after about 35 with a toothpick inserted into centre of loaves.
This is my breakfast, so I end up getting about 4 servings per loaf. I cut off a big piece and have that. It keeps me full all morning.
