Ingredients

2 x 10 oz packets of frozen chopped spinach, thawed and drained of excess water
1.5 cups shredded cheese (munster, cheddar, feta all work well)
2/3 cup milk,
2 eggs,
3 tablespoons breadcrumbs (or flour),
salt pepper, nutmeg to taste
bechamel sauce (milk + butter + flour mixture prepared on stovetop).
Directions
Preheat oven to 380 degrees.
Blend all ingredients together for a muddy consistency.
Pour into a rectangular or large circular pyrex dish, the bottom of which is coated with canola or other oil.
Place in preheated oven.
10-15 minutes into cooking time coat spinach fritata with a coating of bechamel (milk + butter + flour + nutmeg mixture that you prepare on the stovetop) for a creamier/cheesier appearance.
Bake for another 30-35 minutes.
Total baking time should be about 45 minutes.
