Introduction

So moist & tender. I changed the recipe from 2/3 cup of oil to an oil & applesauce blend. Small changes = big results!

Ingredients

    1 1/2 cups gluten free flour blend
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 tsp xanthan gum
    1/2 cup sugar
    1/2 cup mini chocolate chips
    1 tsp pure vanilla
    1/3 cup applesauce, unsweetened
    1/3 cup canola oil
    2 eggs
    2 bananas, mashed (1 cup)

Directions

Stir together dry ingredients. Add wet until blended. Bake at 350 for 20-25 minutes.

If you take out the chocolate chips & banana, you have a "based recipe" to make other kinds of muffins - like cranberry, blueberry, carrot etc. We also like double chocolate muffins (add 2 tbsp cocoa powder to the batter, adds about 5 calories per muffin)

Makes 14 muffins, made in the size large muffin cups, filled 2/3-3/4 full. This keeps them from popping up too high in the tins & not fitting in the lunch box containers!
