Ingredients

1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup Bisquick (or similar) mix
1/2 cup sugar
1 cup evaporated milk
1 tbsp butter, softened
2 tsp pumpkin pie spice
1 tsp vanilla extract
2/3 cup Egg Beaters (or similar egg substitute)
Directions
1. Heat oven to 350 degrees & spray a 9-inch pie plate with spray oil.
2. In large bowl, stir all ingredients until well blended. Pour into pie plate. (Because of the Bisquick mix, a light crust will form as the pie bakes!)
3. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool completely on wire rack (about 2 hours.) Store covered in refrigerator.
*Tip* For even less calories, fat, etc. use Reduced Fat Bisquick and margarine instead of butter. But for the and taste, I like to allow these two things.
