Introduction

Due to a lack of time before my husband had to leave for work (he works evenings), I wanted to come up with a dish that would take as little time as possible to prepare but something that would be tasty & different than what we normally eat. It also had to stay within the calories that I'm alloted. The only thing different I'll do the next time I make this is use Smart Balance spread instead of butter.

Number of Servings: 4

Ingredients

    1 - 2 TBS. Tony Chachere's Original Creole Seasoning
    1 TBS. Butter
    2 Med. Onions, raw, sliced into rings
    1 TBS. Olive Oil
    (4) 4oz Boneless, Skinless Chicken Breasts
    Jar of Classico Mushroom & Ripe Olive Pasta Sauce (or your preference)
    1.5 oz Cheese, Mozzarella, GV Finely Shredded
    2 TBS. Wine, Marsala Cooking Wine

Directions

1. Place chicken breasts in ziplock bag & pound thinner (speeds cooking time)

2. Sprinkle Creole seasoning in ziplock bag with chicken, squish to evenly distribute.

3. In large non-stick frying pan, saute onion rings in butter until golden brown & soft, then remove for later use.

4. Pan fry chicken breasts in olive oil over medium heat until breasts have brown bits on both side & are no longer pink.

5. Preheat oven to 425 degrees

6. Remove breasts & put into casserole dish.

7. Top each breast with 1/4 portion of onions, then 1/2 oz each of Mozzarella.

8. While waiting for oven to come to full heat, deglaze frying pan with Marsala (or your favorite) wine.

9. Add Pasta sauce & stir, cooking until chicken is completely done in oven.

10. Bake chicken until cheese is hot & melted.

Servings: 4

Serve sauce over your favorite pasta & chicken.
