Ingredients

    1 lb Chicken breasts (bone-in), skin removed and fat trimmed
    4 stalks celery, with leaves
    4 carrots, peeled and halved
    2 onions (optional)
    2 bay leaves
    1 parsnip, peeled and halved
    Fresh parsley
    salt

Directions

Place chicken, celery, carrots, onions (if using), bay leaves, parsnip and parsley and salt to taste in a large stockpot and add 12 cups (3 L) of water, or enough to fully cover ingredients. Bring to boil over high heat. Reduce heat to medium-low and simmer, partially covered for 1 1/2 hours, until stock is flavorful and liquid is reduced by about one-quarter. Strain stock through a fine-mesh sieve set over a large bowl. (Chicken and vegetables may be saved for use in other recipes.)
