    3 cups cauliflower florets
    1 1/2 tbsp olive oil
    6 medium garlic cloves, thinly sliced
    1.5 tsp onion powder
    Dash salt
    3 tbsp curry powder
    4 medium carrots, peeled and chopped
    2 tbsp water
    4 cups chickpeas
    3/4 cup coconut milk
    4 1/2 cups coarsely chopped spinach


Heat oil over medium-high heat. Add garlic, onion and a dash of salt. Stirfry 1 minute. Add curry powder, stirfry 1 minute. Add carrots, stirfry 2 minutes. Drizzle water around perimeter of pan and cover for 2 minutes. Stir in chickpeas and coconut milk, cook uncovered for 2.5 minutes. Add spinach and cauliflower*, cook while stirring for one minute. Serve with basmati rice!

* Make sure cauliflower has been slightly cooked first. Other vegetables that work great in this recipe are broccoli and potatoes!
