Introduction

Recipe from Pillsbury Casseroles. A nice twist on the traditional tater tot casserole. I sometimes add onion and bell peppers to the turkey when I brown it. Adds some extra veggies. Ingredients

    1 lb lean ground turkey
    2 tsp. chili powder
    1 tsp. ground cumin
    2 cups frozen cut green beans
    1 can (18 oz.) Progresso Vegetable Classics creamy mushroom soup
    1 can (14.5) diced tomatoes, drained
    1 can (11 oz.) Green Giant Mexicorn whole kernel corn with red and green peppers
    4 cups frozen tater tots (I use 8 servings form the bag)

Directions

1. Heat oven to 350 degrees F. In 12-inch skillet, cook ground turkey over medium heat, stirring frequently, until no longer pink; drain. Str in chili powder and cumin. Spoon into ungreased 13x9-inch (3 quart) glass baking dish.

2. Gently stir in green beans, soup, tomatoes and corn. Top wiwth potato nuggets in single layer.

3. Bake uncovered 45 to 50 minutes or until bubbly around edges and potatoes are golden brown.

Makes 6-8 servings
