Ingredients

    1 lb ground turkey
    1/2 cup chopped onion
    2 cans (8oz each) tomato sauce
    1 can black beans (15oz)
    1 can whole kernel corn undrained (8 3/4oz)
    1 can chopped green chilies undrained 4oz
    6 white corn tortillas
    2 cups reduced fat mexican cheese
    McCormick Spice Packet--Quesadilla blend

Directions

Brown beef and onion in large skillet on med-high heat drain. Add tomato sauce, beans, corn and green chilies, mix well. Stir in all of the spices expect red peppers. Bring to a boil. Reduced to low and simmer 5 minutes. Add red pepper to taste if desired.

Split the beef mixture in half.

Put 1/2 of the beef mixture on the bottom of baking dish top with 1/2 the cheese and three tortillas and repeat with the remainder of the ingredients, bake at 350 for 15min minutes till hot and bubbly. Let stand for 5 min.

    Great Recipe, however it is good to mention that you need to purchase the McCormick spice packet with all the spices that you will need for this recipe. I would definitely make this again. - 10/21/10

    Ya know... that would probably be a huge help and i bet people are wondering what spices when they read the directions.....LOL
