To make for a family of 4, use one box of pasta, one block of light cream cheese, one onion chopped, 2 cloves of garlic, 3 cups of cooked shrimp, one package of sliced mushrooms and 2 heads of broccoli, you can also add seasoning to taste of italian seasoning, salt and granulated garlic.
Directions
Set out your block of cream cheese in a bowl so it can begin to soften (can break into chunks at this point as well). In a stock pot fill half way with water for the pasta. Bring to a boil and add a pinch of salt. Add the pasta. While the pasta is cooking, get a skillet and brown the mushrooms and onions together, add the garlic and brown some more. Add the butter to the pan and then the shrimp last.
Once the pasta is about half way cooked, add the broccoli to the pot. Let cook for a minute and reduce heat. Add some of the water from your pasta and broccoli to your cream cheese a little at a time and whisk, remember that the sauce will become even thinner when you add it to the mushroom and onions so just add a little at a time till the sauce is creamy and thick. Drain the remaining water off of the pasta and broccoli. Add the cream cheese mixture to the skillet and mix, then add your pasta and mix. Serve with parmesean cheese on the side.
