Yummy, peppery Italian Soup Yummy, peppery Italian Soup

Ingredients

    1 pound ground beef, lean
    1 C diced onion
    1C diced carrot
    1C diced celery
    2 cloves garlic, minced
    2 14.5oz cans diced tomatoes w/liquid
    1 15oz can red kidney beans w/ liquid
    1 15oz can great northern beans w/ liquid
    1 12oz can V8
    1 TBSP white vinegar
    1.5 tsp salt
    1 tsp oregano
    1 tsp basil
    .5 tsp pepper
    .5 tsp thyme
    1/2 pound ditali pasta

Tips

10, 1 cup servings


Directions

Brown ground beef in large soup pot. Drain the grease and add the garlic, onion, carrots and celery. Saute about 10 minutes. Add all else except the pasta. Simmer 1 hour.

About 50 minutes into the simmer time, cook the pasta. Drain and add to the soup. Let set 10 minutes then serve.
